Creamy Mexican Casserole

This is a recipe I made up several weeks ago when I had leftover roasted chicken and cooked rice. I wanted something creamy and comforting, but I didn’t have a lot of ingredients to work with. Turns out that this recipe was a huge hit and I’m making it again, tonight! This time I’ll be using ground beef, rather than chicken.

What You’ll Need:

  • 1 pound (about 2 cups) shredded chicken or ground beef, cooked
  • 4 to 5 cups cooked rice
  • 1 block of cream cheese, softened
  • 2 cups salsa (homemade or organic store-bought)
  • 1 cup shredded or cubed cheese (anything from sharp cheddar to fresh mozzarella to goat cheese- you can even use a mixture!)
  • 1 tablespoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon Celtic sea salt
  • 1/4 teaspoon cinnamon

What To Do:

  1. Stir together all ingredients, except for half of the cheese.
  2. Smooth all ingredients into a 9×13 baking dish and top with the other 1/2 cup of cheese.
  3. Bake for 30 minutes at 350 degrees.
  4. Broil, if desired.

    YUM! Thnx for sharing! Made this the other night & it was a hit. Altho we decided we’d leave out the cinnamon next time. Certainly made for a different twist.
    This is definitely a keeper!

    • LOL! My Italian great-grandma always put a bit of cinnamon in meals with ground beef, so it’s something that I love. It won’t hurt anything to leave it out, but you might try it again with real cinnamon. If you buy cinnamon from most grocery stores, it’s not “true” cinnamon, it’s “cassia” cinnamon, which has a much more bitter and harsh taste. “True/sweet/Ceylon” cinnamon is much milder and sweeter. 🙂 I get mine from Mountain Rose Herbs and we use it all the time!

  2. Hey, we made this and it was yummy! We used beef and my homemade salsa which turned out to be a little too hot! oops! Will have to tone the salsa down some for next time. I may add a little more cheese for a cheesier taste! Thanks for sharing!

    • Oops!!! I used one that had just a tad more of a kick than I thought it would, but my girls surprised me and ate it! I just might happen to throw in some extra cheese, too! 😉
